Pineapples and coconuts both grow on the sunny island of Puerto Rico. The people of Puerto Rico make a refreshing drink by combining these two fruits.

For each serving you will need

  • 1/2 cup of cream of coconut (available at most grocery stores)
  • 1 cup of unsweetened pineapple juice
  • 2 cups of crushed ice (To make crushed ice, place ice cubes in a plastic storage bag. Tie the bag shut, and crush the cubes with a hammer. Do this on a cutting board. Then measure out the two cups.)

HERE’S HOW

1. Put all of the ingredients into a blender. Blend for about one minute. (If you don’t have a blender, put the ingredients in a pitcher and stir briskly for two minutes. You can also pour the mixture into a large jar with a tight-fitting top and shake it vigorously for one minute.)

2. Pour the mixture into a tall drinking glass and decorate with fresh fruit, such as bananas and cherries. Spear the fruit on a straw or long wooden skewer.
