Tofu Skin

A woman uses a traditional technique to make tofu skin in a shop in Ningbo, Zhejiang Sheng, China. "During the boiling of soy milk, in an open shallow pan, a film or skin forms on the liquid surface," explains Your Shot photographer James Yang.
