Tofu Skin

A woman uses a traditional technique to make tofu skin in a shop in Ningbo, Zhejiang Sheng, China. "During the boiling of soy milk, in an open shallow pan, a film or skin forms on the liquid surface," explains Your Shot photographer James Yang. "The films are collected and dried into yellowish sheets known as tofu skin." This photo was submitted to Your Shot, our photo community on Instagram.
