Since 2016, Emmanuel and his business partner Guillaume Werstink have been driven by
their mission to promote local ingredients near Rimouski. They founded Chasse-Marée, an
artisanal cannery which brings lesser-known seafoods, like whelk, to people in a
delicious, ready-to-eat way. Rather than riding on the popularity of lobster, crab, and
shrimp, Emmanuel and Guillaume are convinced that by offering something simple,
delicious, and with a personal touch, they will help people to see the gourmet appeal of
unexplored marine products.
